Big Mary's Roasted Garlic
and Hot Pepper Hummus
For you hummus lovers out there, here's some
useful information from those of us at Liquid
Chef. The Phoenicians are credited with bringing
it to Western Europe, although that statement is
highly disputed. We just think that everyone
wants the credit because it is so good. You can
go all the way back to Roman times and find
garbanzos, or chick peas, fully entrenched in
the Iberian diet. Did you know that we (we, as
in our very bright historians) can trace the
cultivation of the chick pea back 7000 years?
Enough history, now on to language. Hummus is
the Arabic word for chick pea. Also pronounced
garbanzo in Spanish, ceci in Italian, gram in
India, and for you really scientific types, the
official name for chick pea is Cicer arietinum.
And finally for you spelling buffs: hoummos,
hommos, homous, humos, and the officially
accepted spelling fro m the Macquarie
Dictionary: hummus.
Whatever your beliefs are about hummus, we
believe that ours is one of the best. We roast
our own garlic and locally grown peppers (poblanos
and jalapeños). Each batch is produced in small
quantities, using our special ingredient: Big
Mary's Bloody Mary Mix! We do not add any funky
stuff like preservatives. Here are some fun
serving ideas: for you traditionalists, serve it
with plain pita bread. We like it with pita
chips, with any raw vegetable (for your health
buffs), as a paste on grilled meats or by itself
with a spoon. Expand your minds, as hummus is
very versatile if you choose to experiment. Our
hummus is currently only available locally in
limited quantities to ensure perfection. It is
not currently available for shipping, but we are
working on it.

Celebrate
Good
Times Gazpacho
Are you ready for good times? Settle in,
relax, and let's learn about gazpacho. Gazpacho
is a liquid salad from the southern Spanish
region of Andalusia, originally field worker's
or poor people's food. Original recipes call for
a bread mixture, but we at Liquid chef try to
keep our carb count low. If you want to carbo
load, try serving it with a baguette or any type
of cracker. Whatever blows your skirt up. The
popularity of gazpacho is credited to Eugenia de
Montijo, the wife of French Emperor Napoleon III
in the 19th century. As far as we can find out,
the first published American recipe was in The
Virginia Housewife by Mary Rudolph in 1824. Is
your brain tired yet? Hang in there, we only
have a little more to learn.
The history of Liquid Chef's "Celebrate
Good Times" Gazpacho is a short, local story.
Our friend/realtor, Tammy Garner (yes, we asked
permission to use her name) used Big Mary's
Bloody Mary Mix in conjunction with a gazpacho
recipe published in our local paper and brought
it to us at the Downtown Farmer's Market. We
sampled, took notes, sampled our customers, took
notes, sampled our friends, and took more notes.
Like all great things in America, trial and
tribulation are the way to perfection. After
compiling all of our notes, comments and
suggestions until our hands and brains cramped,
we went into the kitchen and "Celebrate Good
Times" gazpacho was born. We chose the name
because life is too short to not "celebrate good
times", and our gazpacho just creates a good
feeling. Our customers are consistently giving
us feed back such as "this is the best
commercially produced gazpacho I have ever had",
"I lived in Spain for eight years and this is
better than anything I ever had there", "I make
my own, but yours is much better and I don't
have to do a thing".
It's not brain surgery, just the right
combination of Big Mary's Bloody Mary Mix, extra virgin
olive oil (EVOO), kosher salt, black pepper, fresh
garlic, and locally grown tomatoes, onions,
green bell peppers, cucumbers and cilantro.

Big Mary's Be Young, Be Foolish,
Be Happy Salsa
We'll just jump right in with two of the biggest
events in salsa history: 1) in 1991, salsa
surpassed ketchup as America's top selling
condiment; and 2) in 1994, Campbell Soup Company
bought top salsa manufacturer Pace for a
reported $1.1 billion.
Oh my goodness. Someday we'll be among those
statistics, but for now, we feel happy about
being one of the best locally produced salsas
around! Our deep, dark, secret is using Big
Mary's Bloody Mary Mix as the base. While using
only locally grown produce, we not only maintain
freshness, but also support our local farmers.
"Be Young, Be Foolish, Be Happy."
In their 1968 song, "Be young, be foolish, be
happy" musical group the Tams wrote, "Life is
too short to worry about unimportant things".
Ain't that the truth? They also wrote, "Don't
let the rain get you down, it's a waste of time
... have your fun, live everyday in the bright
sunshine." It applies to all us at Liquid
Chef. It's how our salsa makes you feel. Can
you feel it? Living in the South (yes, Florida
is the South, at least geographically) grants us
access to some of the finest fruits and veggies
around. Our location allows us time and
products to experiment with, so keep an eye open
for seasonal salsas, like our Mango, Papaya and
Kiwi. "Be Young, Be Foolish, Be Happy."
Our original salsa is a beautiful blend of three
different types of onions and three different
types of peppers (both fresh and fire roasted).

her own separate entity, sometimes overshadowed
by Big Mary, the same big flavor, just 75% less
heat for the more sensitive palate. Mary Jane
can be enjoyed all day, every day, with or
without liquor. It's really great after a
workout to! She's carefully produced in small
batches and her sodium content (13%) is much,
much lower than our mainstream, mass produced
competitors (60%-70%). Make your heart sing

to time, some a little more often than others.
